Ingredients

  • 1 cup calamansi juice
  • 1 cup sugar
  • 1/3 cup water
  • 2 ounces club soda
  • 1 ounce gin
  • Candied lime or lemon for garnish

Instructions

  1. In a small saucepan, combine calamansi juice (or lemon juice and orange juice), sugar, and water. Simmer over medium-low heat, stirring occasionally, for 5 minutes.
  2. Remove the syrup from the heat and let it cool. Transfer it to a lidded jar and refrigerate until chilled, about 30 minutes or up to 1 week.
  3. Fill a low-ball glass with ice.
  4. Add 2 ounces of the calamansi syrup, club soda, and gin to the glass, then stir to combine.
