Ingredients

  • 2 egg yolks
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1 small cinnamon stick
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine the milk, cinnamon stick, nutmeg, and sugar. Heat over medium heat until the sugar is dissolved and the mixture is hot, but not boiling.
  2. In a mixing bowl, whisk the egg yolks until pale and fluffy.
  3. Slowly pour the hot milk mixture into the egg yolks, stirring constantly to avoid scrambling the eggs.
  4. Pour the mixture back into the saucepan and heat over medium-low, stirring occasionally, for about 20 minutes until hot but not boiling.
  5. Strain the mixture through a fine mesh and stir in the heavy cream and vanilla extract.
  6. Cool the eggnog to room temperature, then cover and chill until cold.
