Whiskey Whipped Cold Brew

Ingredients
- 2 ounces Irish whiskey
- 1 teaspoon ground espresso
- 2 teaspoons demerara sugar
- 3 ounces cold brew coffee (such as Grady's)
- Whipped cream (for serving)
Instructions
- Combine the Irish whiskey and espresso in a small bowl and let it sit for 15 minutes.
- Strain the whiskey through a coffee filter into a cocktail shaker.
- In a separate bowl, stir the demerara sugar and 2 teaspoons of hot water until the sugar is dissolved.
- Add the demerara syrup and cold brew to the cocktail shaker, then fill it with ice.
- Shake the mixture until the outside of the shaker is frosty, about 30 seconds.
- Strain the cocktail into a Collins glass filled with ice and top it with whipped cream.
