Ingredients
- 2 cups diced watermelon
- 2 tablespoons lime juice
- 2 tablespoons triple sec
- 3 ounces white tequila
- 3 slices jalapenos (divided) (optional)
- 2 1/2 tablespoons granulated sugar
- 2 1/2 tablespoons water
- Salt and sugar for rim
- Mint, lime, and jalapeno for garnish
Instructions
- Place the watermelon, lime juice, triple sec, and tequila in a blender and blend until liquefied.
- Strain the mixture twice through a fine mesh strainer.
- Transfer the watermelon juice and half of the sliced jalapenos (if using) to a large pitcher and refrigerate.
- In a saucepan, heat the sugar, water, and remaining jalapeno slices. Cook for 2 - 3 minutes, then set aside to cool. Strain the jalapeno from the simple syrup.
- Add the jalapeno-infused simple syrup to the watermelon mixture and chill.
- Optionally, remove the jalapenos after 1 - 2 hours to adjust the heat level, or leave them in for immediate serving.
- Wet the rims of glasses, then dip in the salt and sugar.
- Add ice to the glasses and pour the watermelon margaritas. Garnish with lime, mint, and sliced jalapeno.
