Ingredients

  • 2 cups diced watermelon
  • 2 tablespoons lime juice
  • 2 tablespoons triple sec
  • 3 ounces white tequila
  • 3 slices jalapenos (divided) (optional)
  • 2 1/2 tablespoons granulated sugar
  • 2 1/2 tablespoons water
  • Salt and sugar for rim
  • Mint, lime, and jalapeno for garnish

Instructions

  1. Place the watermelon, lime juice, triple sec, and tequila in a blender and blend until liquefied.
  2. Strain the mixture twice through a fine mesh strainer.
  3. Transfer the watermelon juice and half of the sliced jalapenos (if using) to a large pitcher and refrigerate.
  4. In a saucepan, heat the sugar, water, and remaining jalapeno slices. Cook for 2 - 3 minutes, then set aside to cool. Strain the jalapeno from the simple syrup.
  5. Add the jalapeno-infused simple syrup to the watermelon mixture and chill.
  6. Optionally, remove the jalapenos after 1 - 2 hours to adjust the heat level, or leave them in for immediate serving.
  7. Wet the rims of glasses, then dip in the salt and sugar.
  8. Add ice to the glasses and pour the watermelon margaritas. Garnish with lime, mint, and sliced jalapeno.
