Ingredients

  • 10 cardamom pods
  • 15 peppercorns
  • 3-4 cinnamon sticks
  • 5 star anise
  • 25 whole cloves
  • 2 tablespoons brown sugar
  • Zest/peel of one orange
  • 1.50 cups water
  • 2 tablespoons raisins soaked in rum
  • 1/4 cup slivered almonds
  • 6 oz dry or semi-sweet white wine
  • 1 cup apple cider

Instructions

  1. Combine the cardamom, peppercorns, cinnamon sticks, star anise, cloves, brown sugar, orange peel, and water in a saucepan over low heat.
  2. Stir until the sugar dissolves and let the mixture simmer for about 1-1.5 hours, covered.
  3. Strain the extract and store it in a bottle in the fridge if not using immediately.
  4. Heat the apple cider in a large pot, then turn off the stove and add the white wine, the extract, rum-soaked raisins, and any remaining rum from the soaking glass.
  5. Gently heat the wine mixture until just hot, without boiling off the alcohol.
  6. Add slivered almonds to the bottom of a mug and ladle the wine and raisins into the mug. Enjoy!
