  • 1 large egg, yolk and white separated
  • 1 tablespoon granulated sugar
  • Pinch of salt
  • 1/3 cup whole milk
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon French cognac
  • Freshly grated nutmeg


  1. In a bowl, beat the egg yolks until thick and creamy.
  2. Add sugar and beat until very light and fluffy.
  3. Add a pinch of salt and mix well.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Heat the milk, cream, and vanilla in a saucepan over medium heat. Do not boil.
  6. Gradually whisk the hot milk mixture into the yolk mixture.
  7. Add the beaten egg whites and cognac, stirring until well combined.
  8. Pour the warm eggnog into a serving cup and sprinkle freshly grated nutmeg on top. Serve hot.
