Vivacious Vanilla Eggnog

Ingredients
- 1 1/4 cups, heavy cream
- 2 large egg yolks
- 2 tablespoons, Sugar
- 1 cup, whole milk
- 1/8 teaspoon, Salt
- 1 oz, dark rum
- 1/8 teaspoon, ground nutmeg, plus extra for serving
Instructions
- In a medium bowl, whisk 3/4 cup of cream, egg yolks, and sugar until thoroughly combined and pale yellow.
- Simmer the milk and salt in a medium saucepan over medium-high heat, stirring occasionally.
- Slowly pour the milk mixture into the yolk mixture while whisking constantly to temper.
- Return the milk-yolk mixture to the saucepan and cook over medium-low heat, whisking constantly until the mixture reaches 160 degrees.
- Pour the eggnog into a clean bowl and stir in rum and nutmeg.
- Place the eggnog bowl in a slightly larger bowl filled with ice, then refrigerate until the eggnog reaches 40 degrees, stirring occasionally.
- Just before serving, whip the remaining 3/4 cup of cream using a stand mixer until soft peaks form.
- Whisk the whipped cream into the chilled eggnog.
- Serve the eggnog garnished with extra nutmeg. (Eggnog can be covered and refrigerated for up to 24 hours.)
