Ingredients

  • 1 1/4 cups, heavy cream
  • 2 large egg yolks
  • 2 tablespoons, Sugar
  • 1 cup, whole milk
  • 1/8 teaspoon, Salt
  • 1 oz, dark rum
  • 1/8 teaspoon, ground nutmeg, plus extra for serving

Instructions

  1. In a medium bowl, whisk 3/4 cup of cream, egg yolks, and sugar until thoroughly combined and pale yellow.
  2. Simmer the milk and salt in a medium saucepan over medium-high heat, stirring occasionally.
  3. Slowly pour the milk mixture into the yolk mixture while whisking constantly to temper.
  4. Return the milk-yolk mixture to the saucepan and cook over medium-low heat, whisking constantly until the mixture reaches 160 degrees.
  5. Pour the eggnog into a clean bowl and stir in rum and nutmeg.
  6. Place the eggnog bowl in a slightly larger bowl filled with ice, then refrigerate until the eggnog reaches 40 degrees, stirring occasionally.
  7. Just before serving, whip the remaining 3/4 cup of cream using a stand mixer until soft peaks form.
  8. Whisk the whipped cream into the chilled eggnog.
  9. Serve the eggnog garnished with extra nutmeg. (Eggnog can be covered and refrigerated for up to 24 hours.)
