Vegan Whisky Coconut Cream

A creamy, vegan-friendly take on the beloved Baileys Irish Cream, featuring coconut milk, whisky, and a hint of coffee.

Ingredients

  • 2.50 oz Scotch whisky or Irish whiskey
  • 2 tbsp strong fresh coffee, cooled OR 1 heaped tsp instant coffee (dissolved in small amount of boiling water and left to cool)
  • 1 tsp vanilla extract
  • 1/2 cup coconut milk
  • 4-6 tbsp agave syrup, or more to taste

Instructions

  1. Place all the ingredients in a blender.
  2. Blend for 2 minutes or until the mixture is completely smooth.
  3. Taste and adjust the sweetness, whisky strength, or coffee strength as desired.
  4. Blend again.
  5. If storing in the fridge, reheat it in the microwave or in a pan of hot water and whisk it up.
