Ingredients

  • 4.50 oz good quality full-fat coconut milk, chilled
  • 2/3 cup good quality almond milk or other non-dairy milk of choice
  • 2 tbsp raw cashews, soaked
  • 2-3 Medjool dates, pitted and roughly chopped
  • 1/2 tsp pure vanilla extract
  • 1/2 tsp rum extract
  • 1/8 tsp grated fresh nutmeg
  • pinch of ground cinnamon
  • pinch of kosher salt
  • 1-2 tbsp brandy, rum or bourbon (optional)

Instructions

  1. Carefully open the chilled can of coconut milk, scoop the solid coconut cream off the top, and transfer it to a high-powered blender, discarding the remaining liquid.
  2. Add almond milk, soaked and drained cashews, dates, vanilla, rum extract, nutmeg, cinnamon, and salt to the blender.
  3. Blend on high until completely smooth, for about 3-5 minutes.
  4. Strain the eggnog through a fine-mesh sieve if desired.
  5. Serve immediately as is, or add some brandy, rum, or bourbon.
  6. Refrigerate any leftovers in an airtight container; gently warm before enjoying.
