Ingredients
- 4.50 oz good quality full-fat coconut milk, chilled
- 2/3 cup good quality almond milk or other non-dairy milk of choice
- 2 tbsp raw cashews, soaked
- 2-3 Medjool dates, pitted and roughly chopped
- 1/2 tsp pure vanilla extract
- 1/2 tsp rum extract
- 1/8 tsp grated fresh nutmeg
- pinch of ground cinnamon
- pinch of kosher salt
- 1-2 tbsp brandy, rum or bourbon (optional)
Instructions
- Carefully open the chilled can of coconut milk, scoop the solid coconut cream off the top, and transfer it to a high-powered blender, discarding the remaining liquid.
- Add almond milk, soaked and drained cashews, dates, vanilla, rum extract, nutmeg, cinnamon, and salt to the blender.
- Blend on high until completely smooth, for about 3-5 minutes.
- Strain the eggnog through a fine-mesh sieve if desired.
- Serve immediately as is, or add some brandy, rum, or bourbon.
- Refrigerate any leftovers in an airtight container; gently warm before enjoying.
