Ingredients

  • 1.50 cups crushed ice
  • 1.50 oz aged rum
  • 2 fresh pineapple chunks (1-inch each)
  • 1.50 oz pineapple juice
  • 3 oz cream of coconut
  • 5 coffee beans
  • 1 oz Pedro Ximénez sherry
  • mint sprig, for garnish (optional)
  • Fresh cherry, for garnish (optional)

Instructions

  1. Chill a tall glass.
  2. In a blender, combine the ice, rum, pineapple chunks, pineapple juice, cream of coconut, and coffee beans. Puree until smooth.
  3. Pour the mixture into the chilled glass.
  4. Pour the sherry on top of the mixture.
  5. Garnish with a mint sprig and/or cherry, if desired.
