Ingredients
- 1.50 cups crushed ice
- 1.50 oz aged rum
- 2 fresh pineapple chunks (1-inch each)
- 1.50 oz pineapple juice
- 3 oz cream of coconut
- 5 coffee beans
- 1 oz Pedro Ximénez sherry
- mint sprig, for garnish (optional)
- Fresh cherry, for garnish (optional)
Instructions
- Chill a tall glass.
- In a blender, combine the ice, rum, pineapple chunks, pineapple juice, cream of coconut, and coffee beans. Puree until smooth.
- Pour the mixture into the chilled glass.
- Pour the sherry on top of the mixture.
- Garnish with a mint sprig and/or cherry, if desired.
