Ingredients

  • 1 cup pineapple peel pieces
  • 1/2 cup brown sugar
  • 1 cinnamon stick
  • 2 cloves
  • 4 cups mineral water

Instructions

  1. Cut the pineapple peel into pieces.
  2. Place the pineapple peel, brown sugar, cinnamon stick, and cloves in a large jar.
  3. Pour in the mineral water, then seal the jar tightly.
  4. Give the jar a gentle shake to mix the ingredients, then leave it at room temperature.
  5. Shake the jar 3 times a day for 4 to 5 days, allowing the fermentation process to occur gradually.
  6. Once the drink is ready to be filtered, you will notice a layer of foam on top. When this happens, filter the liquid into a sealable bottle.
  7. Leave the bottle at room temperature for 12 hours to allow the Tepache to become sparkling.
