Ingredients

  • 2 tablespoons caster sugar
  • 1 cup frozen chopped pineapple
  • 3 1/2 tablespoons Malibu
  • 2 tablespoons coconut water
  • Coconut flakes and pineapple leaves, for garnish

Instructions

  1. In a saucepan over medium heat, dissolve the sugar in 1/4 cup of water, then bring to a slight boil and cook for 5 minutes. Chill the sugar syrup in the fridge for 1 hour.
  2. In a blender, combine the frozen pineapple and 2 tablespoons of the chilled sugar syrup, then blend until smooth.
  3. Add the Malibu and coconut water to the blender, and continue blending until a smooth mixture is achieved.
  4. Pour the mixture into a serving glass and garnish with coconut flakes and pineapple leaves.
