Ingredients

  • 2 oz evaporated milk
  • 1.40 oz sweetened condensed milk
  • 1.40 oz coconut milk
  • 1.50 oz sweetened cream of coconut
  • 3-inch piece cinnamon stick
  • 1/4 vanilla bean (split lengthwise)
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 tsp vanilla extract
  • 1/4 cup rum (white, spiced, coconut, or a combination)
  • Toasted coconut (for garnish (optional))

Instructions

  1. In a saucepan, combine evaporated milk, condensed milk, coconut cream, and coconut milk over low heat, whisking to combine.
  2. Add the cinnamon sticks, split vanilla bean, ground cinnamon, and nutmeg. Allow the mixture to barely simmer for 20-30 minutes, stirring occasionally until it slightly thickens.
  3. Remove from heat, cool for at least 30 minutes, then remove and discard the cinnamon sticks and vanilla bean.
  4. Slowly whisk in vanilla extract and rum. Pour the mixture into a pitcher, cover, and chill in the refrigerator for at least 2 hours until cold.
  5. Serve in small glasses or over ice. Garnish with a sprinkle of cinnamon, nutmeg, and toasted coconut.
