Ingredients

  • 3 tbsp coconut cream
  • 2 tbsp frozen pineapple juice concentrate
  • Juice of 1 lime
  • 1/4 cup water
  • 2 tbsp light coconut milk
  • 6 fresh mint leaves
  • 1/2 lime, cut into wedges
  • 1 oz coconut rum
  • 1 oz pineapple coconut mixer
  • Ice
  • 4 oz club soda

Instructions

  1. Prepare the base mixer by blending together the coconut cream, frozen pineapple juice concentrate, lime juice, water, and light coconut milk.
  2. In a mojito glass, place the fresh mint leaves at the bottom and squeeze in the lime juice. Muddle gently to release the mint flavors. Add lime wedges to infuse the oils from the rind.
  3. Pour in the coconut rum and pineapple coconut mixer. Fill the glass with ice.
  4. Top off the glass with club soda.
