Ingredients

  • 2 tablespoons powdered monkfruit sweetener
  • 1/4 cup water
  • 1 cup frozen pineapple chunks
  • 4 oz pineapple juice
  • 2 tablespoons coconut cream
  • 2 oz light rum
  • 6-8 ice cubes
  • Garnish: Fresh pineapple slice

Instructions

  1. In a small skillet, combine the powdered monkfruit sweetener and water, stirring until the sweetener dissolves, approximately 3-4 minutes. Set aside to cool.
  2. In a blender, add the frozen pineapple, pineapple juice, coconut cream, rum, and one-quarter cup of the prepared simple syrup. Blend until smooth.
  3. With the blender running, add the ice cubes gradually until the desired consistency is achieved.
  4. Stop the blender, taste the mixture, and add more simple syrup if desired. Blend for an additional 30 seconds to combine.
  5. Pour into a glass, garnish with fresh pineapple slice, and serve immediately. Enjoy!
