Ingredients
- 2 tablespoons powdered monkfruit sweetener
- 1/4 cup water
- 1 cup frozen pineapple chunks
- 4 oz pineapple juice
- 2 tablespoons coconut cream
- 2 oz light rum
- 6-8 ice cubes
- Garnish: Fresh pineapple slice
Instructions
- In a small skillet, combine the powdered monkfruit sweetener and water, stirring until the sweetener dissolves, approximately 3-4 minutes. Set aside to cool.
- In a blender, add the frozen pineapple, pineapple juice, coconut cream, rum, and one-quarter cup of the prepared simple syrup. Blend until smooth.
- With the blender running, add the ice cubes gradually until the desired consistency is achieved.
- Stop the blender, taste the mixture, and add more simple syrup if desired. Blend for an additional 30 seconds to combine.
- Pour into a glass, garnish with fresh pineapple slice, and serve immediately. Enjoy!
