Ingredients

  • 2 tablespoons heavy cream
  • 1 large egg yolk
  • 1 tablespoon sugar
  • 1/2 cup whole milk
  • A pinch of salt
  • 1 tablespoon dark rum
  • A dash of ground nutmeg, plus extra for serving

Instructions

  1. In a medium bowl, whisk together 2 tablespoons of cream, egg yolk, and sugar until pale yellow and thoroughly combined.
  2. In a saucepan, bring milk and salt to a simmer over medium-high heat, stirring occasionally.
  3. Once the milk mixture simmers, remove from heat and slowly pour it into the yolk mixture, whisking constantly to temper.
  4. Return the milk-yolk mixture to the saucepan and cook over medium-low heat, whisking constantly, until it reaches 160 degrees, for about 1 to 2 minutes.
  5. Immediately pour the eggnog into a clean bowl, stir in the rum and nutmeg, and place the bowl in a larger bowl filled with ice. Refrigerate until the eggnog reaches 40 degrees, stirring occasionally, for about 1 to 2 hours.
  6. Just before serving, whip 2 tablespoons of cream until soft peaks form, and then whisk it into the chilled eggnog. Serve garnished with extra nutmeg.
