Ingredients

  • 1 1/2 tablespoons tamarind concentrate
  • 3/4 cup water
  • 3 tablespoons superfine sugar
  • 1/2 inch cinnamon stick
  • 1/2 cup unsweetened pear juice
  • 1/2 (750 ml) bottle chilled Prosecco
  • 1 pear (thinly sliced)

Instructions

  1. In a small saucepan, combine tamarind concentrate, water, and sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture barely comes to a boil. This should take about 10 minutes.
  2. Turn off the heat, add the cinnamon stick, and let the mixture steep until cool for about 30 minutes. Once cooled, strain the mixture through a fine mesh sieve and discard the solids.
  3. Combine the cooled tamarind syrup with the unsweetened pear juice, and chill the mixture until cold, for at least 2 hours.
  4. To serve, fill a coupe or flute glass a quarter to a third full with the pear-tamarind juice, top with chilled Prosecco, and garnish with a slice of pear.
