Swizzling Queen's Rum Mint Delight
A refreshing and flavorful cocktail made with demerara rum, lime juice, rich demerara sugar syrup, and fresh mint, topped with a hint of Angostura bitters.
Ingredients
- 2 oz demerara rum
- 1 oz lime juice
- 3/4 oz rich demerara sugar syrup (2:1)
- Small handful of mint
- 2-4 dashes Angostura bitters
- Mint sprigs (for garnish)
- Crushed ice
Instructions
- Prepare the rich simple syrup by simmering 2 cups of demerara sugar with 1 cup of water until dissolved, then cool and refrigerate.
- In a cocktail shaker, muddle mint, lime juice, and rich simple syrup.
- Add the demerara rum to the shaker and give it a quick shake.
- Pour the mixture into a tall highball glass or tiki mug.
- Fill the glass with crushed ice and use a swizzle stick to gently mix the drink until frost forms on the glass.
- Add 2-4 dashes of Angostura bitters and top with more crushed ice.
- Garnish with a generous bouquet of mint and serve.
