Ingredients

  • 2 oz demerara rum
  • 1 oz lime juice
  • 3/4 oz rich demerara sugar syrup (2:1)
  • Small handful of mint
  • 2-4 dashes Angostura bitters
  • Mint sprigs (for garnish)
  • Crushed ice

Instructions

  1. Prepare the rich simple syrup by simmering 2 cups of demerara sugar with 1 cup of water until dissolved, then cool and refrigerate.
  2. In a cocktail shaker, muddle mint, lime juice, and rich simple syrup.
  3. Add the demerara rum to the shaker and give it a quick shake.
  4. Pour the mixture into a tall highball glass or tiki mug.
  5. Fill the glass with crushed ice and use a swizzle stick to gently mix the drink until frost forms on the glass.
  6. Add 2-4 dashes of Angostura bitters and top with more crushed ice.
  7. Garnish with a generous bouquet of mint and serve.
