Ingredients
- 6 egg yolks
- 1/2 cup sugar
- 2 cups heavy cream
- 1 cup whole milk
- 1 1/4 tsp. freshly grated nutmeg
- Pinch of salt
Instructions
- Whisk together egg yolks and sugar until smooth.
- In a saucepan over medium-low heat, combine heavy cream, milk, freshly grated nutmeg, and a pinch of salt. Heat until steaming.
- Slowly ladle the hot cream mixture into the egg yolk mixture, whisking constantly to temper the eggs.
- Pour the custard back into the saucepan and cook until a thermometer reads 160°F (71°C).
- Transfer the custard to a bowl set in an ice water bath and stir occasionally until it cools.
- Cover and refrigerate the eggnog until ready to serve.
