Ingredients

  • 6 egg yolks
  • 1/2 cup sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 1/4 tsp. freshly grated nutmeg
  • Pinch of salt

Instructions

  1. Whisk together egg yolks and sugar until smooth.
  2. In a saucepan over medium-low heat, combine heavy cream, milk, freshly grated nutmeg, and a pinch of salt. Heat until steaming.
  3. Slowly ladle the hot cream mixture into the egg yolk mixture, whisking constantly to temper the eggs.
  4. Pour the custard back into the saucepan and cook until a thermometer reads 160°F (71°C).
  5. Transfer the custard to a bowl set in an ice water bath and stir occasionally until it cools.
  6. Cover and refrigerate the eggnog until ready to serve.
