Ingredients

  • 1/2 cup sugar
  • 1 cup water
  • Handful of rosemary sprigs
  • 1/2 tbsp rosemary leaves
  • 1/2 tbsp coarse salt
  • 2 tbsp sugar
  • 1/2 tbsp lemon zest
  • 1 oz fresh meyer lemon juice
  • 2 oz tequila
  • 2 oz water
  • 1/2 oz rosemary simple syrup

Instructions

  1. In a medium pot, combine sugar, water, and rosemary sprigs. Simmer until the liquid reduces by half, creating a thick and sweet rosemary infused simple syrup.
  2. Using a food processor, blend rosemary leaves, coarse salt, sugar, and lemon zest to create the rim garnish. If moist, spread it out on a dish to dry or use a dehydrator for a brief moment.
  3. Prepare the cocktail glasses by running a lemon wedge around the rim and dipping in the rim garnish.
  4. In a martini shaker, combine fresh lemon juice, tequila, water, and rosemary simple syrup. Shake well and pour into the prepared glasses. Alternatively, pour the ingredients directly into the glasses and stir thoroughly.
