Ingredients

  • 7.50 oz crushed ice
  • 8 oz chilled pineapple juice
  • 2 oz Tanqueray gin
  • 1 oz elderflower cordial
  • 2 lime wedges
  • 1/4 small pineapple, peeled and thinly sliced
  • 2 tbsp fresh mint leaves, torn
  • 5 oz soda water, chilled

Instructions

  1. Place crushed ice in a large glass serving bowl.
  2. Add chilled pineapple juice, Tanqueray gin, and elderflower cordial to the bowl.
  3. Squeeze the lime wedges over the bowl and then add the squeezed wedges to the punch.
  4. Add the sliced pineapple and torn mint leaves to the bowl.
  5. Pour the chilled soda water over the mixture.
  6. Stir gently to combine all the ingredients.
