Ingredients

  • 1 large egg (separated)
  • 1 tablespoon granulated allulose (or powdered erythritol)
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons heavy cream
  • 1/4 teaspoon vanilla extract or the seeds from 1/4 of a vanilla pod
  • 1 to 2 tablespoons rum (or use cognac or bourbon or a mix) - optional
  • 1/8 teaspoon cinnamon
  • A pinch of nutmeg
  • Freshly grated nutmeg or a pinch of cinnamon for garnish

Instructions

  1. In a large mixing bowl, whisk the egg yolk and low-carb sweetener until pale and creamy.
  2. Whisk in the almond milk, cream, vanilla, spices, and your chosen liquor if using.
  3. Cover the mixture and refrigerate for at least 1 hour or overnight.
  4. When ready to serve, whisk the egg white and additional sweetener until fluffy peaks form.
  5. Fold the egg whites into the eggnog. You can also add some to the top for a cappuccino foam effect.
  6. Top with nutmeg, cinnamon, or both.
