Ingredients

  • 3 tablespoons strawberry simple syrup (1 pound sliced strawberries, 2 cups water, and 1 cup sugar)
  • 1 ounce gin
  • Tonic water
  • Ice

Instructions

  1. In a saucepan, combine the sliced strawberries and 2 cups of water. Bring to a boil, then let it simmer for 20 minutes.
  2. Strain the mixture through a fine mesh sieve into another saucepan, without pressing down on the berries. Discard the berries.
  3. Add 1 cup of sugar to the liquid and bring it to a gentle boil, stirring until all the sugar is dissolved. Remove from heat and let it cool.
  4. Fill a tall glass with ice and add 2 to 3 tablespoons of the strawberry syrup, along with 1 ounce of gin.
  5. Fill the glass with tonic water and stir gently.
