Ingredients

  • 1/4 cup frozen unsweetened whole strawberries or red raspberries
  • 1 tbsp sugar
  • 1 tbsp honey
  • 1/2 tbsp water
  • 1/2 tsp finely shredded lemon peel
  • 1/2 tbsp lemon juice
  • a pinch of whole pink peppercorns (optional)
  • 3-4 fresh sage leaves or a pinch of dried sage, crushed
  • 1/2 cup ice cubes
  • 3 oz champagne or club soda, chilled
  • Fresh sage leaves and fresh strawberries or raspberries for garnish (optional)

Instructions

  1. In a small saucepan, combine the frozen strawberries, sugar, honey, water, lemon peel, lemon juice, and pink peppercorns. Heat over medium heat until the mixture comes to a gentle boil, stirring frequently.
  2. Remove the saucepan from heat and stir in the sage. Allow the mixture to stand for about 1 hour, uncovered.
  3. Strain the mixture through a fine mesh sieve, pressing to extract as much syrup as possible. Discard the solids, and refrigerate the syrup for up to 3 days.
  4. To serve, mix the syrup and ice cubes in a glass. Slowly pour in the champagne or club soda. Garnish with fresh sage leaves and berries, if desired.
