Ingredients

  • 2 large egg yolks
  • 2 tablespoons sugar
  • 1 cup whole milk
  • Large pinch of coarse salt
  • 6 ounces stout beer
  • 1/4 cup heavy cream
  • 2 tablespoons dark rum, such as Appleton Estate
  • Unsweetened freshly whipped cream, for serving
  • Chocolate shavings, for serving

Instructions

  1. In a medium heatproof bowl, whisk egg yolks and 1 tablespoon sugar until pale yellow and thick, about 2 minutes.
  2. In a saucepan, heat the milk and salt until it reaches a bare simmer. Slowly pour the hot milk mixture into the yolk mixture, whisking constantly.
  3. Return the yolk mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
  4. Pour the mixture through a fine-mesh sieve into a large bowl, discarding any solids. Let it cool, stirring occasionally, for about 20 minutes. Then, add the beer, cream, and rum. Cover and refrigerate overnight.
  5. In a heatproof mixer bowl, whisk the remaining 1 tablespoon sugar and egg whites over simmering water until the sugar is dissolved and the mixture is warm.
  6. Remove from heat and beat with a mixer on high speed until stiff peaks form.
  7. Fold the egg white mixture into the eggnog.
  8. Pour into glasses and top with whipped cream and chocolate shavings.
