Ingredients

  • 2 tablespoons long grain white rice
  • 1 1/4 cups water
  • 1 cinnamon stick
  • 2 tablespoons pumpkin puree
  • 2 tablespoons coconut cream (shake well before using)
  • 2 tablespoons brown sugar
  • 1/8 teaspoon pumpkin pie spice
  • 1/8 teaspoon vanilla extract
  • 1 ounce rum

Instructions

  1. In a blender, blend the long grain white rice with 1 1/4 cups of water until finely ground.
  2. Add a cinnamon stick and cover the mixture, then refrigerate for 24 hours.
  3. Remove the cinnamon stick and strain the rice through a cheesecloth into a large pitcher.
  4. In a saucepan, combine the pumpkin puree, coconut cream, brown sugar, pumpkin pie spice, and vanilla over low heat until well mixed and smooth.
  5. Once lukewarm, add the pumpkin sauce to the rice milk and stir well.
  6. Optionally, strain the mixture through a cheesecloth for a finer consistency.
  7. Stir in the rum and garnish with a cinnamon stick for serving.
