Ingredients
- 2 tablespoons long grain white rice
- 1 1/4 cups water
- 1 cinnamon stick
- 2 tablespoons pumpkin puree
- 2 tablespoons coconut cream (shake well before using)
- 2 tablespoons brown sugar
- 1/8 teaspoon pumpkin pie spice
- 1/8 teaspoon vanilla extract
- 1 ounce rum
Instructions
- In a blender, blend the long grain white rice with 1 1/4 cups of water until finely ground.
- Add a cinnamon stick and cover the mixture, then refrigerate for 24 hours.
- Remove the cinnamon stick and strain the rice through a cheesecloth into a large pitcher.
- In a saucepan, combine the pumpkin puree, coconut cream, brown sugar, pumpkin pie spice, and vanilla over low heat until well mixed and smooth.
- Once lukewarm, add the pumpkin sauce to the rice milk and stir well.
- Optionally, strain the mixture through a cheesecloth for a finer consistency.
- Stir in the rum and garnish with a cinnamon stick for serving.
