Spiced Maple Bourbon Nog

Ingredients

  • 3/4 oz real maple syrup
  • 1 1/2 oz bourbon
  • 1 large egg yolk
  • 3/8 cup whole milk
  • 1/8 cup heavy cream
  • 1 cinnamon stick
  • 1/8 tsp vanilla extract
  • 1/16 tsp ground nutmeg
  • 1/32 tsp whole cloves
  • Pinch of salt
  • 1 egg white (reserved from the yolk)

Instructions

  1. Beat the egg yolk until smooth and slightly lightened.
  2. In a small saucepan, simmer milk, heavy cream, maple syrup, cinnamon stick, vanilla extract, nutmeg, whole cloves, and a pinch of salt. Do not boil.
  3. Strain some of the cream mixture into the egg yolk and whisk. Repeat until all the milk mixture is incorporated.
  4. Stir in the bourbon. Cover and refrigerate overnight.
  5. Before serving, whip the reserved egg white until soft peaks form and use to top the eggnog. Sprinkle with ground cinnamon and nutmeg if desired.
