Ingredients

  • 3 lemons, juiced
  • 1 peach
  • 1 pear
  • 2 apricots
  • 1/3 cup water
  • 2/3 cup sugar
  • 1 cup sparkling water

Instructions

  1. Prepare a large bowl of ice water and set it aside.
  2. Boil the water in a saucepan and blanch the fruit for about a minute.
  3. Transfer the blanched fruit to the ice water, then peel off the skin.
  4. Pit the stone fruit (peaches and apricots) and cut them into chunks.
  5. Blend the fruits until smooth.
  6. Pour the fruit puree into a saucepan, add water and sugar, then cook over medium heat until the puree has reduced.
  7. Chill the fruit puree.
  8. When ready to serve, add ice, the fruit puree, lemon juice, and sparkling water. Stir and serve.
