Ingredients
- 3 lemons, juiced
- 1 peach
- 1 pear
- 2 apricots
- 1/3 cup water
- 2/3 cup sugar
- 1 cup sparkling water
Instructions
- Prepare a large bowl of ice water and set it aside.
- Boil the water in a saucepan and blanch the fruit for about a minute.
- Transfer the blanched fruit to the ice water, then peel off the skin.
- Pit the stone fruit (peaches and apricots) and cut them into chunks.
- Blend the fruits until smooth.
- Pour the fruit puree into a saucepan, add water and sugar, then cook over medium heat until the puree has reduced.
- Chill the fruit puree.
- When ready to serve, add ice, the fruit puree, lemon juice, and sparkling water. Stir and serve.
