Ingredients

  • 1/2 cup pineapple skin and pieces
  • 1/3 cup brown sugar
  • 1 cinnamon stick
  • 2 cloves
  • 4 cups mineral water

Instructions

  1. Remove the skin from the pineapple and cut it into pieces.
  2. Place the pineapple skin, pieces, brown sugar, cinnamon, and cloves in a large jar.
  3. Cover the ingredients with mineral water and seal the jar tightly.
  4. Shake the jar to mix the ingredients well and leave it at room temperature.
  5. Shake the jar 3 times a day for 4 to 5 days during the fermentation process.
  6. Once a good layer of foam forms on top, filter the liquid into a bottle with a seal and leave it at room temperature for 12 hours to allow the tepache to become sparkling.
