Ingredients

  • 1.25 oz fine leaf gelatin
  • 14 oz jar black cherries in kirsch
  • 2 cups cherry juice
  • 3 cups prosecco or other sparkling wine
  • few reserved cherries for garnish

Instructions

  1. Soak the gelatin leaves in a small bowl of cold water for 5 minutes until softened.
  2. Set a sieve over a saucepan and drain the cherries in kirsch, collecting the kirsch in the saucepan beneath. Set the cherries aside.
  3. Add the cherry juice to the kirsch in the pan, then gently warm over low heat until just steaming.
  4. Squeeze out the water from the gelatin leaves, then add the gelatin to the warm cherry juice and kirsch mixture. Whisk until dissolved.
  5. Remove from the heat and gradually pour in the sparkling wine, one third at a time, to prevent it from fizzing up too much. Whisk well after each addition.
  6. Put a few cherries in the bottom of a cocktail glass, then pour the jelly mixture over them. Cover with cling film, put in the fridge, and leave to set for at least 4 hours, or overnight.
  7. Top with reserved cherries before serving.
