Ingredients

  • 2 pineapple slices (1" thick)
  • 2 slices of jalapeño
  • 6-8 fresh cilantro leaves
  • 1 1/2 oz mezcal
  • 3/4 oz fresh lime juice
  • 1/2 oz agave syrup
  • Ice

Instructions

  1. Heat a nonstick grill pan over high heat or preheat an outdoor grill to high. Grill the pineapple slices until charred on both sides, about 4 minutes. Let them cool.
  2. In a mixing glass, muddle the grilled pineapple, jalapeño slices, and cilantro leaves until crushed and combined.
  3. Add mezcal, fresh lime juice, and agave syrup to the mixing glass.
  4. Fill the glass with ice and stir well.
  5. Strain the mixture into a serving glass filled with ice.
