Ingredients

  • 1 sugar cube or 1/2 teaspoon sugar
  • 3 dashes Peychaud's Bitters
  • 2 ounces rye whisky
  • 1 dash absinthe
  • Garnish: 2-inch piece lemon peel

Instructions

  1. Fill an old-fashioned glass with ice and let it chill for about 5 minutes.
  2. In another old-fashioned glass, place the sugar and add just enough water to moisten. Use a muddler or bar spoon to mix the sugar and water.
  3. Add the Peychaud's Bitters and rye whisky to the glass with the sugar mixture along with several pieces of ice. Stir the mixture until it is very cold, about 1 minute.
  4. Empty the ice-filled glass and add a dash of absinthe. Swirl the glass to coat the sides with absinthe and pour out any excess.
  5. Strain the whisky mixture into the absinthe-coated glass and garnish with a 2-inch piece of lemon peel.
