Ingredients

  • Ice
  • 1.70 oz reposado tequila (Herradura Reposado)
  • 2 oz pineapple juice
  • 0.50 oz lime juice
  • 3 drops Peychaud's bitters
  • 1/2 pack fresh sage
  • 2 cups white caster sugar
  • 1 fresh sage leaf

Instructions

  1. Start by making the sage syrup: Steep a bunch of sage leaves in 2 cups of boiling water for 5 minutes. Then, remove the sage and stir in the sugar until dissolved. Let the syrup cool completely.
  2. To make the cocktail, add 0.5 oz of the sage syrup into a cocktail shaker with ice.
  3. Pour in the reposado tequila, pineapple juice, lime juice, and Peychaud's bitters.
  4. Shake the ingredients together.
  5. Strain the cocktail into a sherry glass and garnish with a fresh sage leaf.
