Ingredients
- 1/2 cup forced rhubarb, washed and cut into 1/4 inch thick slices
- 1/2 cup caster sugar
- 1 3/4 oz dry gin
- 1/2 split vanilla pod
- 4-5 slices fresh root ginger
- 2 star anise
- zest of 1 blood orange
Instructions
- Place the sliced rhubarb in a large jar and add caster sugar. Mix well to coat the rhubarb with sugar.
- Add the vanilla, ginger, star anise, and blood orange zest (if using). Close the jar and let it sit at room temperature for 12 hours or overnight, shaking occasionally.
- Pour the gin into the jar, stir well, and cover. Allow it to infuse for at least 1 week, shaking the jar daily.
- Strain the infused gin through a fine mesh sieve into a jug and then decant into clean bottles.
- Serve over ice in tall glasses, topped up with soda or tonic water, and a slice of lime or blood orange.
