Ingredients

  • 1/2 cup forced rhubarb, washed and cut into 1/4 inch thick slices
  • 1/2 cup caster sugar
  • 1 3/4 oz dry gin
  • 1/2 split vanilla pod
  • 4-5 slices fresh root ginger
  • 2 star anise
  • zest of 1 blood orange

Instructions

  1. Place the sliced rhubarb in a large jar and add caster sugar. Mix well to coat the rhubarb with sugar.
  2. Add the vanilla, ginger, star anise, and blood orange zest (if using). Close the jar and let it sit at room temperature for 12 hours or overnight, shaking occasionally.
  3. Pour the gin into the jar, stir well, and cover. Allow it to infuse for at least 1 week, shaking the jar daily.
  4. Strain the infused gin through a fine mesh sieve into a jug and then decant into clean bottles.
  5. Serve over ice in tall glasses, topped up with soda or tonic water, and a slice of lime or blood orange.
