Ingredients
- 1/2 cup frozen raspberries, just thawed
- 2 1/2 tbsp caster sugar
- Chilled sparkling wine or sparkling mineral water, to serve
- Crushed ice, to serve
Instructions
- In a medium saucepan over low heat, combine the raspberries and caster sugar. Cook and stir for about 1 minute until the sugar dissolves.
- Increase the heat to high and bring the mixture to a boil. Cook and stir for 2 minutes until the syrup slightly thickens. Remove from heat.
- Transfer the raspberry mixture to a food processor and process until smooth.
- Strain the mixture into a medium glass bowl using a sieve. Pour the cordial into a sealable bottle.
- Pour the cordial into a glass, then top with sparkling wine or mineral water and add crushed ice.
