Ingredients

  • 6 large eggs
  • 1 lime peel
  • 6 (14 oz) cans condensed milk
  • 2 (12 oz) tins evaporated milk
  • 3-4 dashes Angostura bitters
  • 3 cups rum (750 ml bottle)
  • 1/2 tsp freshly grated nutmeg
  • 1/2 tsp freshly grated cinnamon

Instructions

  1. Crack the eggs into a large mixing bowl one at a time, ensuring the white membrane is removed.
  2. Add the peel of a lime to the eggs and whisk until frothy using an electric mixer on low or a handheld whisk.
  3. Slowly pour in the condensed milk while whisking vigorously, then add the evaporated milk and entire bottle of rum.
  4. Mix in the freshly grated nutmeg and cinnamon thoroughly.
  5. Strain the mixture through a fine colander and discard the lime peel.
  6. Pour the mixture into sterile glass bottles for storage.
