Ingredients

  • 2 pounds fresh plums, halved and pitted
  • 0.33 cup granulated sugar
  • 0.25 cup gin
  • 1 large egg white
  • 1 tablespoon fresh lemon juice
  • Ice cubes
  • 0.25 cup club soda
  • 1 lavender sprig, for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the halved and pitted plums with granulated sugar on a large rimmed baking sheet until fully coated, then spread them in a single layer.
  3. Roast the plums in the preheated oven until soft and juicy, stirring halfway through roasting time, which takes about 10 minutes. Let them cool for 5 minutes.
  4. Scrape the roasted plums and any liquid on the baking sheet into a food processor or blender; pulse until smooth.
  5. Pour the puree through a fine wire-mesh strainer into a medium bowl, pressing with a rubber spatula. Discard pulp and refrigerate the puree until completely cool, about 20 minutes.
  6. In a dry cocktail shaker without ice, combine gin, egg white, lemon juice, and plum puree. Shake vigorously to combine, about 15 seconds.
  7. Add enough ice to the shaker to fill three-fourths of the way up. Shake until well chilled, about 10 seconds.
  8. Strain the mixture into a chilled highball glass filled with ice.
  9. Top with club soda and garnish with a lavender sprig.
