Ingredients
- 2 pounds fresh plums, halved and pitted
- 0.33 cup granulated sugar
- 0.25 cup gin
- 1 large egg white
- 1 tablespoon fresh lemon juice
- Ice cubes
- 0.25 cup club soda
- 1 lavender sprig, for garnish
Instructions
- Preheat the oven to 400°F.
- Toss the halved and pitted plums with granulated sugar on a large rimmed baking sheet until fully coated, then spread them in a single layer.
- Roast the plums in the preheated oven until soft and juicy, stirring halfway through roasting time, which takes about 10 minutes. Let them cool for 5 minutes.
- Scrape the roasted plums and any liquid on the baking sheet into a food processor or blender; pulse until smooth.
- Pour the puree through a fine wire-mesh strainer into a medium bowl, pressing with a rubber spatula. Discard pulp and refrigerate the puree until completely cool, about 20 minutes.
- In a dry cocktail shaker without ice, combine gin, egg white, lemon juice, and plum puree. Shake vigorously to combine, about 15 seconds.
- Add enough ice to the shaker to fill three-fourths of the way up. Shake until well chilled, about 10 seconds.
- Strain the mixture into a chilled highball glass filled with ice.
- Top with club soda and garnish with a lavender sprig.
