Ingredients
- 2 pounds fresh plums, halved and pitted
- 0.33 cup granulated sugar
- 0.25 cup (2 ounces) gin
- 1 large egg white
- 1 tablespoon fresh lemon juice
- Ice cubes
- 0.25 cup club soda
- 1 lavender sprig, for garnish
Instructions
- Preheat the oven to 400°F.
- Toss the halved and pitted plums with granulated sugar on a large rimmed baking sheet until fully coated, then spread them in a single layer.
- Roast the plums in the preheated oven until they are soft and juicy, stirring halfway through roasting time; this should take about 10 minutes.
- Let the roasted plums cool for 5 minutes, then scrape the fruit and any liquid on the baking sheet into a food processor or blender and pulse until smooth.
- Pour the puree through a fine wire-mesh strainer into a medium bowl, pressing the puree using a rubber spatula.
- Discard the pulp and refrigerate the puree, uncovered, until completely cool, which should take about 20 minutes.
- Make the cocktail by combining gin, egg white, lemon juice, and plum puree in a dry cocktail shaker without ice. Shake vigorously to combine.
- Add enough ice to the shaker to fill three-fourths of the way up and shake until well chilled.
- Strain the mixture into a chilled highball glass filled with ice, top with club soda, and garnish with a lavender sprig.
