Ingredients

  • 2 pounds fresh plums, halved and pitted
  • 0.33 cup granulated sugar
  • 0.25 cup (2 ounces) gin
  • 1 large egg white
  • 1 tablespoon fresh lemon juice
  • Ice cubes
  • 0.25 cup club soda
  • 1 lavender sprig, for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the halved and pitted plums with granulated sugar on a large rimmed baking sheet until fully coated, then spread them in a single layer.
  3. Roast the plums in the preheated oven until they are soft and juicy, stirring halfway through roasting time; this should take about 10 minutes.
  4. Let the roasted plums cool for 5 minutes, then scrape the fruit and any liquid on the baking sheet into a food processor or blender and pulse until smooth.
  5. Pour the puree through a fine wire-mesh strainer into a medium bowl, pressing the puree using a rubber spatula.
  6. Discard the pulp and refrigerate the puree, uncovered, until completely cool, which should take about 20 minutes.
  7. Make the cocktail by combining gin, egg white, lemon juice, and plum puree in a dry cocktail shaker without ice. Shake vigorously to combine.
  8. Add enough ice to the shaker to fill three-fourths of the way up and shake until well chilled.
  9. Strain the mixture into a chilled highball glass filled with ice, top with club soda, and garnish with a lavender sprig.
