Ingredients

  • 1 ripe dark-flesh plum, roughly chopped
  • 1 tablespoon sugar
  • 1/4 cup water
  • Zest of half a lemon
  • Dash of pure vanilla essence
  • 1 1/2 oz gin
  • Juice of half a lemon
  • Soda
  • Ice

Instructions

  1. In a medium saucepan, combine the plum, sugar, water, lemon zest, and vanilla essence.
  2. Bring the mixture to a gentle simmer and let it cook for 8-10 minutes until it becomes soft and syrupy. Stir occasionally.
  3. Once the syrup has cooled, divide the gin, lemon juice, and soda into four ice-filled glasses.
  4. Spoon two tablespoons of the cooled plum syrup into each glass and gently stir to combine.
