Plum Paradise Fizz
A modern twist on the classic gin fizz with the sweet and sharp flavors of plums.
Ingredients
- 1 ripe dark-flesh plum, roughly chopped
- 1 tablespoon sugar
- 1/4 cup water
- Zest of half a lemon
- Dash of pure vanilla essence
- 1 1/2 oz gin
- Juice of half a lemon
- Soda
- Ice
Instructions
- In a medium saucepan, combine the plum, sugar, water, lemon zest, and vanilla essence.
- Bring the mixture to a gentle simmer and let it cook for 8-10 minutes until it becomes soft and syrupy. Stir occasionally.
- Once the syrup has cooled, divide the gin, lemon juice, and soda into four ice-filled glasses.
- Spoon two tablespoons of the cooled plum syrup into each glass and gently stir to combine.
