Ingredients

  • 2 oz Pisco Brandy
  • 1 oz Fresh Lime Juice
  • 3/4 oz Simple Syrup
  • 3/4 oz Egg Whites (about 1 egg white)
  • 5 dashes Angostura Bitters (for garnish)

Instructions

  1. In a cocktail shaker, combine Pisco brandy, fresh lime juice, simple syrup, and egg whites without ice and shake vigorously.
  2. Add ice to the shaker and shake the ingredients again for 10-15 seconds to chill and aerate the mixture.
  3. Double strain the cocktail using a Hawthorne cocktail strainer and fine strainer into a pre-chilled coupe glass or Nick & Nora glass.
  4. Finish by garnishing with a few drops of Angostura bitters on the egg white foam and create a decorative pattern by dragging a toothpick through the drops.
