Ingredients

  • 2 oz pure pisco
  • 2 drops Angostura Bitters
  • 2 oz simple syrup
  • 2 oz lime juice
  • 1 egg white
  • 6 ice cubes (optional)

Instructions

  1. In a shaker or blender, combine the pisco, simple syrup, lime juice, and egg white.
  2. Add ice cubes if using a shaker, then shake for 10 seconds. If using a blender, blend for five seconds.
  3. Strain the mixture into a glass, filling it halfway, then pause and complete filling the other half.
  4. Garnish the top of the cocktail with two drops of bitters.
