Ingredients

  • 2 ounces pisco
  • 1 ounce freshly squeezed lime juice
  • 3/4 ounce simple syrup
  • 1 egg white
  • Angostura or Amargo bitters for garnish

Instructions

  1. In a cocktail shaker, combine pisco, freshly squeezed lime juice, simple syrup, and egg white.
  2. Shake the mixture for about 20 seconds until frothy.
  3. Add ice to the shaker and shake for another 20 seconds until thoroughly chilled.
  4. Strain the cocktail into a chilled glass.
  5. Using an eye dropper, add four drops of bitters around the top of the drink, then drag a toothpick through the center of each drop to create a swoosh, or simply add a few dashes of bitters on top.
