Ingredients

  • 1/4 nutmeg pod
  • 1/2 tsp allspice berries
  • 1 cinnamon stick, broken
  • 2/3 cup fresh orange juice
  • 2/3 cup pineapple juice
  • 1 1/2 cups Spanish red wine
  • 1 oz cognac, VSOP
  • 1 oz dark rum
  • 1-2 tbsp simple syrup, to taste (1:1, sugar:water)
  • ice
  • orange slices for garnish

Instructions

  1. Place the nutmeg pod in a cloth and break into pieces.
  2. In a large stainless steel saucepan over medium heat, combine nutmeg, allspice, and cinnamon.
  3. Toast the spices until aromatic for about 5 minutes.
  4. Add orange and pineapple juice, and bring to a boil.
  5. Reduce the heat to low and simmer until the mixture is reduced by one-third, around 30 minutes.
  6. Remove from heat, strain the liquid through a fine-mesh strainer into a large container.
  7. Discard the spices, add the wine, cognac, and rum, and stir well.
  8. Gradually add the simple syrup until the flavors are balanced.
  9. Add orange slices, cover, and refrigerate to chill.
  10. To serve, transfer to a punch bowl with ice and garnish with orange slices.
