Ingredients
- 1/4 nutmeg pod
- 1/2 tsp allspice berries
- 1 cinnamon stick, broken
- 2/3 cup fresh orange juice
- 2/3 cup pineapple juice
- 1 1/2 cups Spanish red wine
- 1 oz cognac, VSOP
- 1 oz dark rum
- 1-2 tbsp simple syrup, to taste (1:1, sugar:water)
- ice
- orange slices for garnish
Instructions
- Place the nutmeg pod in a cloth and break into pieces.
- In a large stainless steel saucepan over medium heat, combine nutmeg, allspice, and cinnamon.
- Toast the spices until aromatic for about 5 minutes.
- Add orange and pineapple juice, and bring to a boil.
- Reduce the heat to low and simmer until the mixture is reduced by one-third, around 30 minutes.
- Remove from heat, strain the liquid through a fine-mesh strainer into a large container.
- Discard the spices, add the wine, cognac, and rum, and stir well.
- Gradually add the simple syrup until the flavors are balanced.
- Add orange slices, cover, and refrigerate to chill.
- To serve, transfer to a punch bowl with ice and garnish with orange slices.
