Ingredients

  • 2 to 3 sprigs fresh rosemary
  • 1 cup sugar
  • 1 cup water
  • 1 oz Rosemary Simple Syrup
  • 2 oz whiskey
  • 3/4 oz lemon juice
  • 3/4 oz pineapple juice
  • 6 to 8 fresh mint leaves
  • Rosemary sprig for garnish

Instructions

  1. In a small saucepan, combine rosemary, sugar, and water. Bring to a boil, then simmer until the sugar is dissolved. Let it steep for 30 minutes, then remove the rosemary sprigs and refrigerate the simple syrup in an airtight container.
  2. In a shaker, muddle the rosemary simple syrup and mint leaves.
  3. Add whiskey, lemon juice, and pineapple juice to the shaker, then fill it with ice.
  4. Shake the mixture for 10 to 15 seconds.
  5. Strain the cocktail into a rocks glass filled with crushed ice.
  6. Garnish with a sprig of rosemary and serve.
