Ingredients

  • 2 to 3 sprigs fresh rosemary
  • 1 cup sugar
  • 1 cup water
  • 1 oz Rosemary Simple Syrup
  • 2 oz whiskey
  • 3/4 oz lemon juice
  • 3/4 oz pineapple juice
  • 6 to 8 fresh mint leaves
  • Rosemary sprig for garnish

Instructions

  1. In a small saucepan, combine the fresh rosemary, sugar, and water to create the rosemary simple syrup.
  2. Boil the mixture over medium-high heat and cook until the sugar is completely dissolved.
  3. Remove from heat and let it steep for 30 minutes.
  4. Remove the rosemary sprigs and store the simple syrup in a sealed container in the refrigerator.
  5. To make the cocktail, add the rosemary syrup and mint leaves to a shaker and muddle.
  6. Fill the shaker with ice, then add the whiskey, lemon juice, and pineapple juice.
  7. Shake for 10 to 15 seconds until well chilled.
  8. Strain into a rocks glass filled with crushed ice.
  9. Garnish with a sprig of rosemary and mint leaves. Serve and enjoy!
