Ingredients
- 1/2 cup coarsely chopped pineapple
- Juice of 1 lime and 1/2 orange
- 1/2 oz finely grated ginger
- 1.50 oz gin
- To taste: ginger beer
- To serve: lemon, lime, and orange slices and mint
- 3.50 tbsp caster sugar
- 1/2 vanilla bean, split and seeds scraped
- 2 tbsp firmly packed mint
Instructions
- In a saucepan over medium-high heat, stir sugar and 4.2 fl oz water until the sugar dissolves.
- Add the split vanilla bean and seeds, bring to a boil, and cook until a light syrup forms (1-2 minutes).
- Remove from heat, add mint, pour into a container, and refrigerate until chilled.
- Strain the syrup (discard the mint and return the vanilla pod to the syrup), then refrigerate until required. This syrup keeps for up to a month.
- Pulse the pineapple in a food processor to finely chop, then transfer to a jug.
- Add the lime and orange juices, grated ginger, and vanilla-mint syrup to the jug.
- Add gin and plenty of ice, stir to chill.
- Top up with ginger beer to taste and serve garnished with citrus slices and mint.
