Ingredients

  • 1/2 cup coarsely chopped pineapple
  • Juice of 1 lime and 1/2 orange
  • 1/2 oz finely grated ginger
  • 1.50 oz gin
  • To taste: ginger beer
  • To serve: lemon, lime, and orange slices and mint
  • 3.50 tbsp caster sugar
  • 1/2 vanilla bean, split and seeds scraped
  • 2 tbsp firmly packed mint

Instructions

  1. In a saucepan over medium-high heat, stir sugar and 4.2 fl oz water until the sugar dissolves.
  2. Add the split vanilla bean and seeds, bring to a boil, and cook until a light syrup forms (1-2 minutes).
  3. Remove from heat, add mint, pour into a container, and refrigerate until chilled.
  4. Strain the syrup (discard the mint and return the vanilla pod to the syrup), then refrigerate until required. This syrup keeps for up to a month.
  5. Pulse the pineapple in a food processor to finely chop, then transfer to a jug.
  6. Add the lime and orange juices, grated ginger, and vanilla-mint syrup to the jug.
  7. Add gin and plenty of ice, stir to chill.
  8. Top up with ginger beer to taste and serve garnished with citrus slices and mint.
