Pimm's Citrus Mint Cooler

Ingredients

  • 1 tea bag
  • 3-4 mint leaves
  • 2 tablespoons granulated sugar
  • 2 oz orange juice
  • 2 oz lemon juice
  • 2 oz Pimm's No 1
  • 1-2 sliced strawberries
  • Plenty of ice

Instructions

  1. Place the tea bag and mint leaves in a large jug and pour over 1.2 quarts of boiling water.
  2. Let it infuse for 10 minutes, then remove the tea bag and mint leaves.
  3. Stir in the sugar until dissolved, then let the mixture cool.
  4. Remove any remaining mint leaves and add the orange juice, lemon juice, and Pimm's No 1.
  5. Chill the mixture thoroughly, which can be done a day ahead.
  6. Serve the drink over plenty of ice, and garnish with slices of orange, lemon, and strawberry.
