Ingredients

  • 1/8 oz absinthe
  • 3 dashes celery bitters
  • 1/2 oz pear liqueur (St. George Spiced Pear)
  • 3/4 oz fresh lime juice
  • 1/2 oz simple syrup
  • 1 1/2 oz London dry gin (London No.3)

Instructions

  1. Rinse a coupe glass with absinthe and discard any excess.
  2. Combine all the remaining ingredients in a mixing tin.
  3. Shake the mixture with ice.
  4. Strain the cocktail into a chilled coupe glass.
  5. Garnish with a pear wheel.
