Pear Elixir
A delightful and refreshing cocktail that captures the essence of pear season with its harmonious blend of gin, elderflower liqueur, pear eau de vie, and luxurious pear foam.
Ingredients
- 1 1/2 oz gin
- 1 oz St. Germain elderflower liqueur
- 1/2 oz lemon juice
- 1/2 oz dry vermouth
- 1/4 oz pear eau de vie
- 2 1/2 oz pear nectar
- 3 oz St. Germain elderflower liqueur
- 2 1/2 oz egg whites
- pear foam
- cinnamon (for garnish)
- slice pear (for garnish)
Instructions
- Juice ripe pears to yield 7 ounces of pear nectar. If not available, use bottled pear nectar with minimal artificial ingredients.
- Combine the pear nectar, egg whites, and St. Germain in a whipped cream canister and shake vigorously. Charge the canister with a nitrous oxide cartridge, shake again, and refrigerate for at least one hour.
- In a shaker, mix gin, St. Germain, lemon juice, dry vermouth, and pear eau de vie with ice, then shake for 10 seconds.
- Strain the mixture over new ice into a small Collins glass, then remove the pear foam from the fridge and top the cocktail with it.
- Garnish with freshly grated cinnamon and a slice of fresh pear.
