Ingredients

  • 1 1/2 oz gin
  • 1 oz St. Germain elderflower liqueur
  • 1/2 oz lemon juice
  • 1/2 oz dry vermouth
  • 1/4 oz pear eau de vie
  • 2 1/2 oz pear nectar
  • 3 oz St. Germain elderflower liqueur
  • 2 1/2 oz egg whites
  • pear foam
  • cinnamon (for garnish)
  • slice pear (for garnish)

Instructions

  1. Juice ripe pears to yield 7 ounces of pear nectar. If not available, use bottled pear nectar with minimal artificial ingredients.
  2. Combine the pear nectar, egg whites, and St. Germain in a whipped cream canister and shake vigorously. Charge the canister with a nitrous oxide cartridge, shake again, and refrigerate for at least one hour.
  3. In a shaker, mix gin, St. Germain, lemon juice, dry vermouth, and pear eau de vie with ice, then shake for 10 seconds.
  4. Strain the mixture over new ice into a small Collins glass, then remove the pear foam from the fridge and top the cocktail with it.
  5. Garnish with freshly grated cinnamon and a slice of fresh pear.
