Ingredients

  • 1 ripe peach, pitted and sliced
  • 1 tablespoon sugar
  • 1/2 teaspoon fresh lemon juice
  • 1/4 cup Prosecco or Champagne
  • 1 tablespoon elderflower liqueur, preferably St-Germain

Instructions

  1. Blend the ripe peach, sugar, and lemon juice in a blender until smooth.
  2. Strain the mixture through a fine sieve into a metal bowl.
  3. Freeze the mixture until firm, for at least 6 hours.
  4. Use a fork to scrape the frozen mixture until fluffy.
  5. Fill a Champagne flute halfway with Prosecco or Champagne.
  6. Add 1 tablespoon of elderflower liqueur to the glass.
  7. Top the glass with 1 tablespoon of the frozen peach granita.
  8. Serve immediately.
