Ingredients
- 1 ripe peach, pitted and sliced
- 1 tablespoon sugar
- 1/2 teaspoon fresh lemon juice
- 1/4 cup Prosecco or Champagne
- 1 tablespoon elderflower liqueur, preferably St-Germain
Instructions
- Blend the ripe peach, sugar, and lemon juice in a blender until smooth.
- Strain the mixture through a fine sieve into a metal bowl.
- Freeze the mixture until firm, for at least 6 hours.
- Use a fork to scrape the frozen mixture until fluffy.
- Fill a Champagne flute halfway with Prosecco or Champagne.
- Add 1 tablespoon of elderflower liqueur to the glass.
- Top the glass with 1 tablespoon of the frozen peach granita.
- Serve immediately.
